Ingredients
- 2 cups cooked brown rice
- 2 boneless, skinless chicken breasts, cubed
- 1 cup A BIT ON THE SIDE SALSA (mild or hot, depending on preference)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 red bell pepper, diced
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- Salt & pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh coriander & lime wedges for garnish (optional)
Directions
Preheat oven to 180°C (350°F).In a large oven-safe skillet or baking dish, mix the cooked rice, salsa, black beans, corn, and diced bell pepper.Season the chicken pieces with cumin, smoked paprika, salt, and pepper, then mix into the rice mixture.Cover with foil and bake for 20 minutes, until the chicken is fully cooked.Remove foil, sprinkle shredded cheese over the top, and bake uncovered for another 5 minutes until cheese melts.Garnish with fresh coriander and serve with lime wedges.
