Jalapeno Jelly and Soy Glazed Salmon

Do you find very hard to please everyone all the time when it comes to food?  Sometimes it seem as though our taste buds are as unique as our fingerprints! Everyone wants something different and I for one have neither the time nor inclination to cook a bespoke meal for each of my darlings.  But I do want to keep them happy and well fed.  I try to serve fish at least once a week as I believe that it's best to get our nutrition from whole food rather than supplements and it's a lovely change from the usual sources of protein.  

When it comes to fish, some in my house are not totally enamored of salmon...they complain that it's too oily and heavy for them, whereas I just love that about it.  So, time to get creative!  I have played around with different marinades for salmon (or any oily fish) but this has turned out to be the favourite.  The ginger and chili cut through the oil and lightens the whole dish. 

After you take the time preparing the marinade, this is a really quick hand dish that is great for family get togethers, special dinner parties or a cozy night in with your other half. 

Serve with a side salad or steamed veg and either rice or chips.
