Although we usually associate basil with Italian cooking, this herb actually originated in India over 4000 years ago. Basil was believed to have many healing properties…sooth flatulence, heal skin conditions and cure headaches. It was even fed to horses as an aphrodisiac…endless possibilities!
- Place a layer of Basil Jelly in a small glass. To this, add a layer of finely chopped
tomatoes and shallots. Top with cooked
prawns. Serve as a start to a special
meal or a light lunch along with a slice of crispy bread.
- Brush some crostini with olive oil, top with mozzarella
cheese and grill. Spread Basil Jelly
over the cheese and top with cooked, crumbled bacon. Share this tasty morsel with someone tasty!
